Chicken Fettuccini Alfredo;


Juicy chicken breasts, pasta (linguine) cooked in a thick pasta Alfredo sauce and steamed broccoli.
Served with a salad (optional) Jacket potato (optional) Garlic bread (optional)







Easy Chicken Casserole;

An easy dinner for all. Chicken and vegetable stew is not only a warm and easy dinner, but also a healthy dish too.
Chicken breast, vegetables of your choice, spring onions, new potatoes, chicken stock, flour, and add whatever you fancy. Such a versatile dish!
It's great as you can pack this meal with vitamins, without the children knowing! (if they are fussy eaters)
Quick example; Spinach, garlic, thyme, parsley etc etc.

Tikka Salmon With Rice;

Another great dinner here that's easy to cook and makes fish a little easier to eat should your children not be keen on fish.
Marinade salmon, with yogurt and curry paste. Cook it with brown rice (steamed until tender).
Tikka curry paste, Salmon, Low fat yogurt, olive oil, a large red onion, brown basmati rice, 100g pomegranate seeds, a small pack of coriander (leaves picked) and then add whatever you would like. Again you could pack it full of vitamins and hey presto! A great, warm dish for the autumn and winter months.

Old Time Favourite - Shepherd's Pie;

This meal has been cooked in the families kitchen for years.
Why? Well why not. A hearty, warm meal that can be packed with vitamins and of course it is so easy to cook!
450/500g lean mince meat, potatoes, 3 finely chopped carrots, 2 leeks thinly cut, lamb or beef stock, 100g split red lentils, parsnips (any cut will do), chopped parsley (3 table spoons average), a dash of garlic powder (stir into mash) broccoli, pees and gravy. Whether its oxo and gravy granules, or gravy made from scratch. Job done.
You can add as much or as little as you would like as this dish is really flexible and most of it is down to preference / dietary needs etc. But the above is what I use and I must say 'It is very nice' and a few good vitamins also!
